Ingredients

Dry Ingredients

  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup Greek yogurt
  • 1/2 cup vegetable oil
  • 4 large eggs

Add-ins

  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch pans.
  • Mix dry ingredients in a bowl. In another, combine wet ingredients.
  • Combine wet and dry, then fold in carrots, pineapple, and walnuts.
  • Divide batter into pans and bake for 35–40 minutes. Cool completely.
  • Mix Greek yogurt with honey and vanilla for frosting, then spread over cooled cakes.

Notes

For a lighter frosting, use Greek yogurt with a touch of honey and vanilla.
