Ingredients

Blueberries

  • 1.5 cups blueberries (fresh or frozen)

Bananas

  • 3 large ripe bananas

Egg

  • 1 large egg

Greek Yogurt

  • 0.5 cup Greek yogurt

Honey or Sugar

  • 0.25 cup honey (or 1/2 cup sugar)

Vanilla Extract

  • 2 teaspoons vanilla extract

All-purpose Flour

  • 1.5 cups all-purpose flour

Rolled Oats

  • 1 cup rolled oats

Baking Powder

  • 2 teaspoons baking powder

Baking Soda

  • 0.5 teaspoon baking soda

Cinnamon

  • 0.5 teaspoon cinnamon

Salt

  • pinch salt

Instructions 

  • Preheat oven to 350°F (180°C). Line a 12-cup muffin pan.
  • In a large bowl, mash bananas. Add egg, Greek yogurt, honey, and vanilla; mix well.
  • Stir in flour, oats, baking powder, baking soda, cinnamon, and salt until just combined.
  • Gently fold in blueberries. Spoon batter into liners.
  • Bake for 22 minutes. Cool before removing from pan.

Notes

Lightly oil liners or pan for easy removal.
