Ingredients

Dry ingredients

  • 1.5 cups white whole wheat flour (plus 1 tablespoon, divided)
  • 0.75 cup old-fashioned rolled oats
  • 0.5 cup light brown sugar (lightly packed)
  • 1 tablespoon baking powder (preferably aluminum-free)
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon kosher salt

Wet ingredients

  • 1 cup nonfat milk (plus 2 tablespoons)
  • 0.33 cup unsalted butter (melted and cooled)
  • 2 large eggs (at room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 cup blueberries (fresh or frozen, do not thaw if frozen)

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together dry ingredients: flour, oats, brown sugar, baking powder, cinnamon, and salt.
  • In another bowl, combine wet ingredients: milk, melted butter, eggs, and vanilla. Mix well.
  • Pour wet ingredients into dry ingredients and stir until just combined. Fold in blueberries.
  • Divide batter evenly among muffin cups. Bake for 20 minutes or until golden brown.

Notes

For extra flavor, sprinkle a little cinnamon on top before baking.
