Enjoy these wholesome blueberry muffins that are perfect for a nutritious breakfast or snack.

Ingredients

Dry ingredients

  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon cinnamon

Wet ingredients

  • 2 large eggs
  • 0.33 cup honey or maple syrup
  • 0.33 cup melted coconut oil or olive oil
  • 0.5 cup Greek yogurt or unsweetened applesauce
  • 1 teaspoon vanilla extract

Blueberries

  • 1 cup fresh or frozen blueberries

Instructions 

  • Preheat oven to 180°C (350°F) and prepare muffin tin.
  • Mix dry ingredients in a bowl; whisk wet ingredients separately.
  • Combine wet and dry; fold in blueberries gently.
  • Fill muffin cups ¾ full and bake for 18–20 minutes.
  • Cool slightly and enjoy warm or at room temperature.

Notes

Use fresh blueberries for best flavor, but frozen works well too.
