A wholesome and delicious snack cake made with oats, bananas, and Greek yogurt, perfect for a quick treat or breakfast.

Ingredients

Dry ingredients

  • 1 ½ cups instant oats
  • 1 ¼ cups whole wheat or gluten-free flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt

Wet ingredients

  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 2 large egg whites (room temperature)
  • 2 tsp vanilla extract
  • 1 cup mashed banana (about 2 medium)
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup pure maple syrup
  • ¼ cup nonfat milk

Instructions 

  • Preheat oven to 350°F (175°C) and spray a 9-inch square pan with nonstick spray.
  • Mix dry ingredients in a bowl; whisk wet ingredients in another. Combine with mashed banana, yogurt, and maple syrup. Alternate adding dry mixture and milk, stirring just until combined.
  • Spread batter into prepared pan and bake for 26-29 minutes until firm and a toothpick comes out clean.
  • Cool completely before slicing and serving.
