Ingredients
Dry ingredients
1 ½cupsinstant oats
1 ¼cupswhole wheat or gluten-free flour
1 ½tspbaking powder
½tspbaking soda
2tspground cinnamon
¼tspground nutmeg
½tspsalt
Wet ingredients
1tbspcoconut oil or unsalted butter, melted and cooled slightly
2largeegg whites(room temperature)
2tspvanilla extract
1cupmashed banana (about 2 medium)
½cupplain nonfat Greek yogurt
¼cuppure maple syrup
¼cupnonfat milk
Instructions
Preheat oven to 350°F (175°C) and spray a 9-inch square pan with nonstick spray.
Mix dry ingredients in a bowl; whisk wet ingredients in another. Combine with mashed banana, yogurt, and maple syrup. Alternate adding dry mixture and milk, stirring just until combined.
Spread batter into prepared pan and bake for 26-29 minutes until firm and a toothpick comes out clean.
Cool completely before slicing and serving.
