Ingredients

Wet ingredients

  • 2 pieces ripe bananas, mashed
  • 1 cup rolled oats
  • 1 cup whole wheat flour ((or gluten-free flour))
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk ((dairy or non-dairy))
  • 1/4 cup coconut oil, melted ((or any neutral oil))
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup nuts or chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix wet ingredients: bananas, applesauce, honey, milk, oil, eggs, vanilla.
  • Combine dry ingredients: oats, flour, baking powder, baking soda, salt, cinnamon.
  • Mix dry into wet until just combined; fold in nuts or chocolate chips if using.
  • Spoon batter into muffin cups, bake for 18-20 minutes, then cool.

Notes

For added flavor, sprinkle cinnamon on top before baking.
