Ingredients

Dry ingredients

  • 1.5 cups rolled oats
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt

Wet ingredients

  • 2 large eggs
  • 0.33 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 0.25 cup unsweetened Greek yogurt
  • 1 teaspoon vanilla extract

Main ingredients

  • 2 medium apples, grated (keep skin on)
  • 0.5 cup chopped walnuts (optional)
  • 0.25 cup dried cranberries (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, fold in apples and optional nuts/cranberries.
  • Divide batter into muffin cups and bake 18-22 minutes.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
