Ingredients

Dry ingredients

  • 1.5 cups whole wheat flour
  • 1 cup diced apple (about 1 large apple, peeled and cored)

Wet ingredients

  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 0.5 cup maple syrup
  • 0.25 cup unsweetened applesauce
  • 2 large eggs (at room temperature)
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.25 tsp salt

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the dry ingredients: flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  • In another bowl, combine yogurt, maple syrup, applesauce, eggs, and diced apple. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups and bake for 20 minutes or until a toothpick inserted comes out clean.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
