Instructions
Preheat oven to 350°F (175°C).
Mix dry ingredients in a bowl.
Combine wet ingredients and add to dry mixture.
Fold in grated carrot, diced apple, raisins, and chopped apricots.
Pour batter into a greased baking dish and bake for 30 minutes.
Notes
For added flavor, sprinkle with cinnamon before baking.
