  • 1 cup long-grain rice (uncooked)
  • 2 cups chicken broth
  • 1 cup bell peppers, chopped (any color)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.5 teaspoon salt (adjust to taste)

Instructions 

  • Cook the ground turkey in a skillet until browned, then add chopped onions, bell peppers, and garlic. Cook until vegetables soften.
  • Stir in rice, spices, and pour in broth with diced tomatoes. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  • Remove from heat, fold in frozen peas, and let warm through. Fluff rice and garnish with parsley before serving.
