Ingredients

Meat

  • 1 lb ground turkey (7% fat)
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning (homemade or store-bought)
  • 1 small onion
  • 4 large garlic cloves

  • ½ cup chicken stock

Toppings

  • Guacamole
  • Pico de gallo
  • Canned sweet corn
  • Shredded sharp cheddar cheese
  • Black beans (substitute with pinto beans)

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté chopped onion and garlic for 2-3 minutes until fragrant.
  • Add ground turkey, sear for 1-2 minutes, then cook until no longer pink.
  • Season with salt, pepper, and taco seasoning; add chicken stock and simmer until reduced.
  • Serve over cooked rice with toppings like guacamole, pico de gallo, cheese, beans, cilantro, lime, sour cream, and lettuce.
