Instructions
Cook the rice according to package instructions, then keep warm.
In a large skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and cook briefly.
Add ground beef to the skillet, cook until browned, then season with salt and pepper. Stir in taco seasoning and tomato sauce, simmer until thickened.
While beef simmers, prepare toppings: warm corn and black beans, slice avocado, halve cherry tomatoes, and chop cilantro.
Assemble bowls by layering rice, beef mixture, and toppings. Garnish with cheese and cilantro, then serve with lime wedges.
Notes
