0.5cuptomato sauce or salsa
0.5cupwater
1cuplong-grain white or brown rice
2cupswater or chicken broth
1eachlime, juiced
2tablespoonsfresh cilantro, chopped
1tablespoonbutter or olive oil
1cupblack beans, drained and rinsed
1cupcorn, grilled or canned, drained
1cupshredded lettuce (romaine or iceberg)
1eachavocado, diced or sliced
1cupcherry tomatoes, halved
0.5cupred onion, thinly sliced
1cupshredded cheese (cheddar, Monterey Jack, or blend)
0.5cupsour cream
to tastehot sauce, for drizzling

Instructions
Rinse rice, then cook in boiling water or broth with a pinch of salt for 15-20 minutes. Fluff and stir in lime juice, cilantro, and butter. Keep warm.
In a skillet, heat olive oil, cook diced onion until softened, then add garlic and cook briefly. Add ground beef, cook until browned, then stir in taco seasoning, tomato sauce, and water. Simmer 5-7 minutes until thickened.
Assemble bowls starting with rice, then top with seasoned beef, black beans, corn, lettuce, avocado, tomatoes, red onion, and cheese. Finish with sour cream, hot sauce, cilantro, jalapeño slices, and lime wedges.
