A quick and hearty one-pan meal combining seasoned ground beef, rice, vegetables, and cheese for a satisfying dinner.

Ingredients

Meat and vegetables

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2–3 cloves garlic, minced
  • 1 diced bell pepper
  • 1 cup long-grain white rice (uncooked)
  • 2 ¼ cups beef broth
  • 1 cup canned tomatoes or salsa
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp chili powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) (recommended)
  • 1 cup frozen peas or mixed vegetables
  • 2 tbsp olive oil

Optional add-ins

  • corn, black beans, taco seasoning, jalapeños, Worcestershire sauce Additional optional ingredients

Instructions 

  • Heat olive oil in a skillet, cook onion until tender, then add garlic for 30 seconds.
  • Add ground beef, season with salt and pepper, cook until browned. Drain excess fat if needed.
  • Stir in bell pepper and spices; toast for 1 minute. Add rice, toast for another minute.
  • Pour in broth and tomatoes, bring to a boil, then simmer covered for 18–20 minutes. Add peas in last 5 minutes.
  • Top with cheese, cover until melted, then fluff and serve.

Notes

Feel free to customize with your favorite add-ins like corn or jalapeños for extra flavor.
