Instructions
Heat olive oil in a large pot over medium heat. Add onions and ground beef; cook until browned, about 8 minutes.
Add rice and chickpeas; stir to combine.
Pour in water, bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let sit off heat for 5-10 minutes.
Fluff rice, garnish with parsley and pine nuts, then serve warm.
