Ingredients

Meat

  • 1 lb lean ground beef

Grains

  • 1 cup dry quinoa

Water

  • 2 cups water

Oils and Aromatics

  • 1 tbsp olive oil

Vegetables

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper chopped bell pepper

Spices and Seasonings

  • 1 tsp paprika or cumin

Toppings

Instructions 

  • Rinse quinoa and cook with water until fluffy.
  • Heat olive oil in a skillet over medium heat.
  • Cook onion until soft, then add garlic and vegetables.
  • Add ground beef and cook until browned, then season with salt, pepper, and spices.
  • Stir in cooked quinoa and mix well. Serve warm with toppings.
