A flavorful and healthy salad combining grilled chicken, pineapple, and fresh vegetables with a tangy teriyaki dressing.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts
  • ½ cup teriyaki sauce
  • ½ cup pineapple juice (from the can of pineapple rings)

Vegetables

  • 8 cups chopped romaine lettuce
  • 2 pieces avocados
  • ½ cup cherry tomatoes
  • 1 can pineapple rings (15-ounce)
  • cup rice vinegar or apple cider vinegar
  • cup olive oil

Fresh herbs

  • ½ cup fresh cilantro
  • ½ cup pineapple juice (from the can of pineapple rings)

Instructions 

  • Marinate chicken with teriyaki sauce and half of the pineapple juice for 15 minutes.
  • Whisk together remaining pineapple juice, rice vinegar, olive oil, and teriyaki sauce to make the dressing. Chill until needed.
  • Preheat grill; cook chicken and pineapple until charred and cooked through (6-10 minutes per side).
  • Slice grilled chicken; assemble salad with lettuce, chicken, tomatoes, avocado, pineapple, and cilantro. Drizzle with dressing before serving.

Notes

For extra flavor, marinate longer or add a sprinkle of sesame seeds on top.
