Ingredients

Meat

  • 1 pound skinless, boneless chicken breasts (cubed into bite-size pieces)
  • Olive oil Olive oil
  • 2 cloves garlic (pressed through garlic press)
  • 1 tablespoon lemon zest (about 1 tablespoon)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Pinch or two black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon paprika

Flatbreads

  • 4 middle eastern-style flatbreads flatbreads (or pita bread)

Greens

  • Arugula greens arugula greens
  • Sliced tomatoes sliced tomatoes

Garlic sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt (full-fat, plain)
  • 3 cloves garlic (pressed through garlic press)
  • 1 tablespoon tahini
  • 2 to 3 teaspoons sriracha (adjust to spice preference)
  • 1 teaspoon salt
  • Pinch black pepper
  • Pinch cayenne pepper (adjust for spiciness)
  • 1/2 teaspoon lemon juice

Instructions 

  • Marinate the chicken with oil, garlic, lemon zest, lemon juice, and spices for 20 minutes.
  • Skewer the chicken and grill over medium-high heat for 6-8 minutes until cooked and charred; rest for 5-10 minutes.
  • Mix all garlic sauce ingredients until smooth; refrigerate if desired.
  • Assemble wraps by spreading garlic sauce on flatbread, adding greens, tomatoes, chicken, and more sauce; fold into wraps.
