Ingredients

Sauce and Marinade

  • 4 Tbsp butter, melted
  • 2 Tbsp honey
  • 1 Tbsp chipotle chili powder
  • 3 cloves garlic, minced
  • to taste Kosher salt

Salmon

  • 4 oz skin-on salmon fillets

Vegetables

  • 1 medium zucchini, chopped
  • 1 small red onion, chopped

Herbs and Garnish

  • 1/4 cup basil leaves, torn
  • for serving Lime wedges

Instructions 

  • Mix melted butter, honey, chipotle chili powder, garlic, and salt.
  • Brush the mixture over salmon fillets.
  • Toss zucchini, summer squash, and onion with remaining butter mixture.
  • Seal vegetables and salmon in foil packets.
  • Grill for 15-20 minutes, then serve topped with basil and lime wedges.

Notes

Ensure salmon skin is crispy by grilling with skin side down first.
