A fresh and flavorful salad featuring grilled shrimp, crisp veggies, and a smoky BBQ dressing, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1 lb raw shrimp (deveined and thawed if frozen)

Oil

  • 1 tbsp avocado oil

Vegetables

  • 1 can corn (drained)
  • 2 hearts of romaine (chopped)
  • 0.5 large English cucumber (diced)
  • 1 large tomato (diced)
  • 1 small red onion (diced)
  • 2 avocados diced

Dressing

  • 0.5 cup BBQ sauce
  • 0.5 cup avocado oil
  • 0.25 cup lemon juice
  • 0.25 cup apple cider vinegar
  • 2 tablespoons honey
  • 0.5 tsp salt
  • 0.25 tsp pepper

Instructions 

  • Whisk all dressing ingredients together.
  • Marinate shrimp in 1/3 cup of dressing for 20 minutes.
  • Cook corn in a pan with 1 tbsp oil until golden and charred, about 5-6 minutes.
  • Chop all veggies and assemble salad in a large bowl.
  • Grill shrimp for 2 minutes per side, then add to salad with veggies, corn, and remaining dressing.
  • Serve immediately and enjoy!

Notes

For extra flavor, brush shrimp with additional BBQ sauce before grilling.
