Enjoy fluffy, protein-packed pancakes made with Greek yogurt for a nutritious breakfast.

Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch salt

Wet ingredients

  • 1 cup plain Greek yogurt
  • 1 large egg
  • ½ cup milk
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract

For cooking

  • Butter or oil (for greasing skillet)

Instructions 

  • Mix dry ingredients in a bowl. Whisk wet ingredients separately until smooth.
  • Combine wet and dry mixtures until just blended.
  • Heat skillet, add butter or oil. Pour ¼ cup batter for each pancake.
  • Cook until bubbles form and edges set, then flip and cook until golden.
  • Stack pancakes and serve with toppings of choice.

Notes

For extra flavor, add fresh berries or nuts on top.
