Delicious and moist muffins packed with fresh blueberries and creamy Greek yogurt, perfect for breakfast or a snack.

Ingredients

Dry ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 2 large eggs eggs
  • 1 cup sugar
  • 4 tablespoons unsalted butter (melted)
  • 1 1/4 cups greek yogurt

Blueberries

  • 1 1/2 cups blueberries (frozen or fresh)

Instructions 

  • Preheat oven to 350°F (175°C) and grease muffin tins.
  • Mix dry ingredients in a bowl. Whisk eggs, sugar, melted butter, and Greek yogurt in another bowl.
  • Combine wet and dry ingredients, then gently fold in blueberries.
  • Divide batter into muffin tins and bake for 25-30 minutes until golden and a toothpick comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a rack.

Notes

For extra flavor, add a sprinkle of cinnamon or lemon zest to the batter.
