A flavorful baked chicken dish featuring juicy tomatoes, briny olives, and creamy feta, perfect for a Mediterranean-inspired meal.

Ingredients

Protein

  • 4 pieces Chicken thighs

Vegetables & Oils

  • 2 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Kalamata olives (pitted)

Dairy

  • 0.5 cup Feta cheese (crumbled)

Liquids & Seasonings

  • 2 tablespoons Lemon juice
  • 1 te teaspoon Dried oregano
  • to taste Salt
  • to taste Pepper

Instructions 

  • Pat chicken thighs dry and season with salt, pepper, and oregano.
  • Combine cherry tomatoes, olives, and garlic in a baking dish. Drizzle with olive oil and lemon juice, then nestle the chicken on top.
  • Bake at 400°F (200°C) for 35-40 minutes until cooked and tomatoes are tender.
  • Sprinkle feta over the dish, broil for 3-5 minutes, then garnish and serve.

Notes

For extra flavor, add fresh herbs before serving.
