A quick and flavorful one-pot dish combining tender chicken, fresh vegetables, and zesty lemon rice inspired by Greek flavors.

Ingredients

Protein

  • 1.5 lb skinless boneless chicken thighs

Spices and seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon red pepper flakes

Olive oil

  • 2 tablespoons olive oil

Vegetables

  • 8 oz grape tomatoes (sliced in half)
  • 5 cloves garlic (minced)
  • 5 oz fresh spinach (chopped)

Liquids

  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 cups cooked jasmine rice
  • 15 oz canned chickpeas
  • 6 oz feta cheese (diced into small cubes)

Additional oils and juices

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice

Herbs

  • 2 tablespoons chopped fresh oregano (optional)

Garnish

  • fresh oregano (for garnish)

Instructions 

  • Season chicken thighs with oregano, paprika, salt, and red pepper flakes.
  • Heat olive oil in a large pot and cook chicken until browned, about 5-7 minutes.
  • Add garlic, tomatoes, and spinach; cook until vegetables are tender, about 3 minutes.
  • Stir in lemon juice, cooked rice, chickpeas, and feta; cook for another 3-5 minutes until heated through.
  • Garnish with chopped fresh oregano and serve hot.

Notes

For extra flavor, marinate chicken with herbs beforehand.
