Instructions
Season chicken thighs with oregano, paprika, salt, and red pepper flakes.
Heat olive oil in a large pot and cook chicken until browned, about 5-7 minutes.
Add garlic, tomatoes, and spinach; cook until vegetables are tender, about 3 minutes.
Stir in lemon juice, cooked rice, chickpeas, and feta; cook for another 3-5 minutes until heated through.
Garnish with chopped fresh oregano and serve hot.
Notes
For extra flavor, marinate chicken with herbs beforehand.
