A delicious Italian-style focaccia topped with sweet grapes and aromatic aniseed, perfect for sharing.
Ingredients
Dough
500gplain (all-purpose) flour
20gfresh yeast
400mllukewarm water
75mlextra-virgin olive oil
Grapes
600gconcord grapes(or other black grapes)
80gcaster (superfine) sugar
1teaspoonaniseed(optional)
Optional toppings
icing (confectioners’) sugar(for dusting)
Instructions
Mix flour and yeast, then add water gradually, kneading until smooth. Add olive oil and let rise until doubled, about 1 hour.
Preheat oven to 190°C (375°F). Grease a baking tray and divide dough into two parts, spreading the larger piece to cover the tray.
Spread two-thirds of grapes over the dough, sprinkle with half the sugar, drizzle with olive oil, and sprinkle half the aniseed. Cover with the second dough layer and seal edges.
Press down gently to create dimples, then top with remaining grapes, sugar, aniseed, and olive oil. Bake for 30 minutes until golden and grapes are cooked.
Cool completely, then cut into squares. Dust with icing sugar if desired and serve.
