A delicious Italian-style focaccia topped with sweet grapes and aromatic aniseed, perfect for sharing.

Ingredients

Dough

  • 500 g plain (all-purpose) flour
  • 20 g fresh yeast
  • 400 ml lukewarm water
  • 75 ml extra-virgin olive oil

Grapes

  • 600 g concord grapes (or other black grapes)
  • 80 g caster (superfine) sugar
  • 1 teaspoon aniseed (optional)

Optional toppings

  • icing (confectioners’) sugar (for dusting)

Instructions 

  • Mix flour and yeast, then add water gradually, kneading until smooth. Add olive oil and let rise until doubled, about 1 hour.
  • Preheat oven to 190°C (375°F). Grease a baking tray and divide dough into two parts, spreading the larger piece to cover the tray.
  • Spread two-thirds of grapes over the dough, sprinkle with half the sugar, drizzle with olive oil, and sprinkle half the aniseed. Cover with the second dough layer and seal edges.
  • Press down gently to create dimples, then top with remaining grapes, sugar, aniseed, and olive oil. Bake for 30 minutes until golden and grapes are cooked.
  • Cool completely, then cut into squares. Dust with icing sugar if desired and serve.

Notes

Use well-oiled hands to handle the dough for easier shaping.
