A moist and flavorful gluten-free vanilla cake perfect for any celebration or treat. Made with simple ingredients and topped with your favorite frosting.

Ingredients

Dry Ingredients

  • 2 ⅓ cups gluten-free all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp sea salt
  • 2 tsp baking powder
  • 1/4 tsp baking soda

Wet Ingredients

  • 3/4 cup avocado oil
  • 1 cup full-fat canned coconut milk
  • 3 large eggs
  • 1 Tbsp pure vanilla extract

Fats & Frosting

  • 2 sticks vegan butter
  • 4 to 6 cups powdered sugar
  • 6 to 8 Tbsp full-fat canned coconut milk (as needed)
  • 1 tsp pure vanilla extract

Instructions 

  • Preheat oven to 350°F and prepare two 8-inch pans with parchment or greasing.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately. Combine both until smooth.
  • Divide batter into pans and bake for 23-28 minutes until golden. Cool completely.
  • Frost the cooled cakes with your favorite frosting, layering and decorating as desired.
  • Serve and enjoy your homemade gluten-free vanilla cake!

Notes

Ensure coconut milk is well-stirred before mixing. Adjust baking time based on altitude and oven calibration.
