Ingredients

Butter

  • 100 g unsalted butter (softened)

Sugar

  • 175 g caster sugar

Eggs

  • 2 large eggs

Yoghurt

  • 140 g natural yoghurt

Milk

  • 2 tbsp milk

Flour

  • 210 g plain gluten free flour

Cocoa Powder

  • 40 g cocoa powder

Baking Powder

  • 2 tsp baking powder

Bicarbonate of Soda

  • 1 tsp bicarbonate of soda

Xanthan Gum

  • 1/4 tsp xanthan gum

White Chocolate Chips

  • 50 g white chocolate chips

Milk Chocolate Chips

  • 50 g milk chocolate chips

Dark Chocolate Chips

  • 50 g dark chocolate chips

Chocolate

  • 200 g milk and dark chocolate

Cream

  • 100 ml double cream

Instructions 

  • Preheat oven to 200°C / Fan 180°C / Gas Mark 6 and line 12 muffin cases.
  • Cream butter and sugar, add eggs, yoghurt, and milk; mix well.
  • Sift in dry ingredients, fold in, then stir in chocolate chips.
  • Divide batter into cases, bake for 5 mins, then reduce temperature and bake 15-18 mins.

Notes

Use high-quality chocolate for best flavor.
