Delight in these easy gluten-free strawberry crumble bars, combining sweet, tangy jam with a buttery crumble topping.

Ingredients

Fruits and Jam

  • 350 g strawberries, (hulled and halved)
  • 200 g caster sugar
  • 1 unit lemon (juice only)

Crumble topping

  • 115 g unsalted butter (melted)
  • 115 g caster sugar
  • 230 g plain gluten free flour (e.g., FREEE by Doves Farm)

Instructions 

  • Cook strawberries, lemon juice, and sugar until jam sets, then cool.
  • Preheat oven to 180°C. Line a 20cm square tin with baking paper.
  • Mix melted butter, sugar, and flour to form crumble; press half into the tin.
  • Spread jam over the base, then crumble remaining mixture on top.
  • Bake for 35-40 minutes until golden. Cool and cut into 16 squares.

Store in an airtight container for up to 3 days for best freshness.
