Enjoy these light and fluffy gluten-free peach muffins, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 2 1/4 cups gluten free flour blend (see note)
  • 1 cup cane sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet ingredients

  • 1 1/3 cups non-dairy milk (see note)
  • 1/2 cup melted butter (see note)
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Peach mixture

  • 1 cup peaches (chopped) (optional to peel)
  • 1/4 cup brown sugar
  • 1/2 cup gluten free flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted cold butter

Instructions 

  • Preheat oven to 425ยบ F. Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl. Combine with dry ingredients and add chopped peaches. Mix until just combined.
  • Divide batter into muffin tins and bake for 20 minutes until golden.

Notes

Do not over-mix the batter for fluffy muffins.
