Ingredients

Dry Ingredients

  • 1.5 cups gluten-free flour
  • 1 cup sugar
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon sea salt

Chocolate Chips

  • 1.75 cups semi-sweet chocolate chips, separated
  • 0.25 cup reserved chocolate chips for topping

Wet Ingredients

  • 2 eggs eggs, at room temperature
  • 0.5 cup dairy-free vanilla yogurt
  • 0.5 cup avocado oil
  • 0.5 cup almond milk or other non-dairy milk
  • 1.5 teaspoons vanilla extract

Instructions 

  • Mix dry ingredients and 1.75 cups chocolate chips in a bowl. Set aside. Reserve some chips for topping.
  • Whisk eggs, yogurt, oil, milk, and vanilla in a separate bowl.
  • Combine wet and dry mixes; let sit 10 minutes. Preheat oven to 425°F. Prepare muffin tin.
  • Fill muffin cups 3/4 full, top with reserved chips, and slightly push in.
  • Bake at 425°F for 5 minutes, then lower to 350°F and bake 16-17 minutes. Cool on wire rack.
