Ingredients

Dry Ingredients

  • 2 cups all purpose gluten free flour blend (Better Batter or similar)
  • 3/4 teaspoon xanthan gum (omit if your blend contains it)
  • 6 tablespoons unsweetened natural cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly grated nutmeg
  • 2/3 cup packed light brown sugar
  • 4 tablespoons unsalted butter (melted and cooled)
  • 4 tablespoons neutral oil (canola, vegetable, grapeseed, peanut oil)
  • 2 eggs at room temperature, beaten
  • 1 1/2 teaspoons pure vanilla extract
  • 7/8 cup heavy cream (at room temperature)
  • 1 cup confectioners sugar
  • 1 tablespoon unsweetened natural cocoa powder
  • 1 teaspoon milk (any kind, plus more as needed)

Gluten free sprinkles for decorating (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients in a bowl.
  • Whisk wet ingredients together, then combine with dry ingredients until smooth.
  • Fill donut molds with batter and bake for 10 minutes.
  • Let donuts cool slightly before glazing.
  • Mix heavy cream, confectioners sugar, cocoa, and milk to make glaze. Dip donuts and decorate with sprinkles if desired.
