Ingredients

Dry Ingredients

  • 2 cups all purpose gluten free flour blend
  • 1 teaspoon xanthan gum (omit if your blend already contains it)
  • 6 tablespoons cornstarch (replace with additional Cup4Cup if using it as flour)
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt

Wet Ingredients

  • 4 egg whites egg whites (at room temperature)
  • 1 egg egg (at room temperature)
  • 1 1/3 cups buttermilk (at room temperature)
  • 2 teaspoons pure vanilla extract
  • 10 tablespoons unsalted butter (at room temperature)
  • 1 1/2 cups granulated sugar

Instructions 

  • Preheat oven to 350°F (175°C). Grease pans and line with parchment paper.
  • Sift dry ingredients together. Whisk wet ingredients until well combined.
  • Beat butter and sugar until light and fluffy. Alternately add dry and wet ingredients, mixing after each addition.
  • Divide batter into pans, smooth the tops, and bake for 20-30 minutes until golden and set.
  • Cool in pans 15 minutes, then transfer to wire racks to cool completely before frosting.

Notes

Ensure not to overmix the batter to keep the cake fluffy.
