Delight in these soft, chewy gluten-free banana bread cookies packed with chocolate chips and walnuts for a wholesome treat.

Ingredients

wet ingredients

  • 1/2 cup very well mashed banana
  • 1/2 cup dark brown sugar
  • 1/3 cup white sugar
  • 1/4 cup butter (melted)
  • 1 teaspoon vanilla extract

dry ingredients

  • 1 1/2 cups gluten free all purpose baking flour
  • 1 teaspoon corn starch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips
  • 1/2 cup finely chopped walnuts (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix wet ingredients until combined, then add dry ingredients and fold in chocolate chips and walnuts.
  • Scoop dough onto parchment-lined baking sheet and bake for 11-14 minutes.
  • Cool briefly, then transfer to wire rack. Enjoy!

Notes

For softer cookies, slightly underbake and let cool.
