A flavorful and healthy side dish featuring roasted vegetables infused with garlic and herbs, finished with balsamic vinegar and Parmesan cheese.
Ingredients
Vegetables

broccoli florets

carrots, sliced into thin rounds

red bell pepper, cut into strips

red onion, cut into wedges

Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Combine all vegetables in a bowl, add garlic, olive oil, thyme, rosemary, salt, and pepper. Toss well.
Spread vegetables on the baking sheet in a single layer. Roast for 20-25 minutes, stirring halfway.
Remove from oven, drizzle with balsamic vinegar, and toss gently.
Transfer to a serving platter, sprinkle with Parmesan, and serve warm.
Notes
For extra flavor, add a squeeze of lemon before serving.
