A flavorful and healthy side dish featuring roasted vegetables infused with garlic and herbs, finished with balsamic vinegar and Parmesan cheese.

Ingredients

Vegetables

  • 2 cups broccoli florets
  • 1 cup carrots, sliced into thin rounds
  • 1 red red bell pepper, cut into strips
  • 1 zucchini sliced zucchini
  • 1 red red onion, cut into wedges
  • 8 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 1 tablespoon balsamic vinegar
  • 1/4 cup freshly grated Parmesan cheese

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • Combine all vegetables in a bowl, add garlic, olive oil, thyme, rosemary, salt, and pepper. Toss well.
  • Spread vegetables on the baking sheet in a single layer. Roast for 20-25 minutes, stirring halfway.
  • Remove from oven, drizzle with balsamic vinegar, and toss gently.
  • Transfer to a serving platter, sprinkle with Parmesan, and serve warm.

Notes

For extra flavor, add a squeeze of lemon before serving.
