A flavorful and easy roasted cauliflower dish infused with garlic, Parmesan, and fresh herbs, perfect as a side or snack.

Ingredients

Cauliflower

  • 1 medium cauliflower, cut into florets (about 8 cups)
  • 3 cloves garlic, minced
  • 2 Tbsp. fresh parsley, chopped (finely chopped)
  • Juice of 1/2 lemon lemon juice
  • 3 Tbsp. extra-virgin olive oil
  • 1 1/2 tsp. paprika
  • 3/4 tsp. kosher salt
  • 1/2 tsp. cracked black pepper
  • 2 to 3 Tbsp. grated Parmesan cheese

Instructions 

  • Preheat oven to 450ºF (230ºC) and prepare a baking sheet.
  • Toss cauliflower florets with olive oil, paprika, salt, and pepper.
  • Spread on baking sheet and roast for 25 minutes, tossing halfway.
  • Add garlic and Parmesan, roast for 5 more minutes.
  • Finish with lemon juice and parsley, toss gently, and serve warm.

Notes

For extra flavor, sprinkle additional Parmesan before serving.
