A deliciously roasted cauliflower dish infused with garlic and topped with Parmesan cheese, perfect as a side or snack.

Ingredients

Cauliflower

  • 1 head cauliflower (about 2 lbs) (Remove leaves and stem, cut into florets)
  • 4 cloves garlic (minced)
  • 0.25 cup extra virgin olive oil
  • 0.5 cup Parmesan cheese (freshly grated)
  • to taste salt
  • to taste pepper
  • optional fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cut cauliflower into florets and toss with olive oil, garlic, salt, and pepper.
  • Arrange on a baking sheet, sprinkle with half of the Parmesan.
  • Roast for 25 minutes, add remaining Parmesan, and roast 5 more minutes.
  • Garnish with parsley before serving.

Notes

For extra flavor, sprinkle with additional Parmesan or herbs.
