Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into chunks)
  • 2 tablespoons olive oil (divided)

Spices & Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • to taste Salt and black pepper

Vegetables

  • 1 cup broccoli florets
  • 1 medium zucchini (sliced)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 medium carrot (sliced)
  • 2 cloves garlic (minced)
  • optional Fresh parsley (chopped)
  • optional Red pepper flakes (for heat)

Instructions 

  • Toss chicken with spices and coat evenly.
  • Cook chicken in 1 tbsp olive oil until browned, then set aside.
  • Sauté vegetables in remaining oil until tender-crisp, add garlic, cook briefly.
  • Return chicken to skillet, toss to combine, cook 2-3 minutes.
  • Garnish with parsley and red pepper flakes, serve hot.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
