A quick and healthy stir-fry combining tender chicken, crisp zucchini noodles, and flavorful garlic sauce for a delicious low-carb meal.

Ingredients

Protein

  • 1 lb chicken breast (boneless, skinless, cubed)

Vegetables

  • 3-4 medium zucchinis (spiralized into noodles)

Fats & Oils

  • 2 tbsp olive oil (divided)

Aromatics & Flavorings

  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 2 stalks green onions (chopped)
  • 0.33 cup low sodium soy sauce (or tamari/coconut aminos)
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch (optional, for thicker sauce)
  • 1 pinch red pepper flakes (optional)

Instructions 

  • Spiralize zucchinis and set aside on paper towels.
  • Mix soy sauce, oyster sauce, sesame oil, rice vinegar, and cornstarch in a bowl.
  • Cook chicken in 1 tbsp olive oil until golden, then remove from pan.
  • Sauté garlic and ginger in remaining oil for 30 seconds, then add zucchini noodles and cook 2-3 minutes.
  • Return chicken to pan, add sauce, and toss until thickened. Garnish with green onions and serve.

Notes

Use fresh garlic and ginger for best flavor. Adjust red pepper flakes to taste.
