Instructions
Let the steak sit at room temperature for 30 minutes, then cut into 1-inch cubes and season with salt and pepper.
Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear the steak bites in batches for about 2 minutes per side until cooked to medium.
Reduce heat to medium-low, add remaining butter and minced garlic, stirring until fragrant (1-2 minutes).
