Instructions
Heat oil in a large pot, sauté diced onion until translucent (~5 min).
Add diced carrots and celery, cook for 5-7 min until softened.
Stir in minced garlic, cook 30 sec until fragrant.
Add lentils and vegetable broth, bring to boil, then simmer 25-30 min until tender.
In last 10 min, add crushed tomatoes if using, season with salt and pepper, simmer uncovered.
Turn off heat, squeeze lemon juice into soup, stir to combine, serve hot.
Notes
For extra flavor, add roasted carrots or fresh herbs before serving.
