A hearty and nutritious soup packed with fresh vegetables and lentils, perfect for a comforting meal.

Ingredients

Vegetables

  • 1 large onion (diced)
  • 2 carrots carrots (diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 1 cup dried lentils (rinsed)
  • 6 cups vegetable broth (low-sodium preferred)
  • 2 large carrots (diced or roasted for smoky flavor)
  • 1 can crushed tomatoes (optional, for brightness)
  • to taste salt and pepper (for seasoning)
  • 1 squeeze lemon (for brightness)

Instructions 

  • Heat oil in a large pot, sauté diced onion until translucent (~5 min).
  • Add diced carrots and celery, cook for 5-7 min until softened.
  • Stir in minced garlic, cook 30 sec until fragrant.
  • Add lentils and vegetable broth, bring to boil, then simmer 25-30 min until tender.
  • In last 10 min, add crushed tomatoes if using, season with salt and pepper, simmer uncovered.
  • Turn off heat, squeeze lemon juice into soup, stir to combine, serve hot.

Notes

For extra flavor, add roasted carrots or fresh herbs before serving.
