Ingredients

Dry ingredients

  • 1.5 cups oat flour ((150g))
  • 3 teaspoons baking powder

Wet ingredients

  • 1 cup unsweetened almond milk
  • 1 egg egg
  • 0.25 cup pure maple syrup
  • 2 teaspoons pure vanilla extract

Instructions 

  • Mix oat flour and baking powder in a large bowl.
  • Beat egg with maple syrup, almond milk, and vanilla until smooth.
  • Combine wet and dry mixtures until smooth.
  • Heat a greased pan over medium-high heat.
  • Pour 1/3 cup batter, cook until bubbles form, then flip and cook 1-2 minutes.
  • Repeat to make 10-12 pancakes and serve warm with toppings.

Notes

For extra fluffiness, let the batter rest for a few minutes before cooking.
