2 1/3cupsoat flour(*)
1/2cupcoconut sugar((or brown sugar))
1/3cupcornstarch
2teaspoonsbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1/2teaspooncinnamon((optional))
Wet ingredients
2largeeggs
2/3cupmilk(any type)
2/3cupGreek yogurt(regular or vanilla)
1/3cupolive oil((canola or vegetable oil works too))
2teaspoonsvanilla extract
1cupmix-ins(* (e.g., dark chocolate chips))
Instructions
Preheat oven to 375ºF (190ºC). Line a 12-cup muffin tin with paper liners and spray with non-stick spray.
Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
Combine wet and dry mixtures, then fold in mix-ins. Distribute batter evenly into muffin cups.
Bake for 14-16 minutes until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
