Flavorful Sweet Chili Chicken Bowl Recipe with Easy Coconut Lime Drizzle

A vibrant and easy-to-make chicken bowl featuring sweet chili sauce, coconut lime drizzle, and fresh veggies for a delicious meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs

Sauces and liquids

  • ½ cup sweet chili sauce
  • cup full-fat canned coconut milk
  • 1 large lime (zest and juice)
  • 2 cloves garlic, minced

Grains

  • cups cooked jasmine or basmati rice ((about ¾ cup dry, 150g))

Vegetables

  • 2 cups mixed veggies (bell peppers, snap peas, shredded carrots, or preferred)

Herbs and seasonings

  • ½ cup fresh cilantro, chopped
  • to taste Salt and freshly cracked pepper

Oils

  • 2 tbsp olive oil

Instructions 

  • Cook the rice: rinse rice, boil with water, simmer for 15 minutes, then fluff.
  • Pat chicken dry, season with salt and pepper.
  • Heat 1 tbsp olive oil, cook chicken 5 mins per side until golden and cooked through. Slice into strips.
  • In the same skillet, heat remaining oil, sauté veggies and garlic for 5 mins until tender. Season with salt and pepper.
  • Whisk coconut milk, lime juice and zest, and a pinch of salt to make the coconut lime drizzle.
  • Assemble bowls with rice, veggies, chicken, drizzle with sauce, and garnish with cilantro.

Notes

For extra flavor, marinate chicken in some sweet chili sauce before cooking.
