Ingredients

Protein

  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g)

Herbs and aromatics

  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh dill
  • 2 tablespoons chopped fresh mint
  • 3 cloves garlic, minced
  • 1 lemon lemon (juice and zest)

Cooking fats and grains

  • 3 tablespoons extra virgin olive oil
  • 1 cup couscous (170g)

Vegetables and toppings

  • 1 medium cucumber, diced
  • ¼ small red onion, finely chopped
  • 1 cup full-fat plain Greek yogurt (240g)
  • Optional cherry tomatoes, kalamata olives, roasted red peppers, toasted pine nuts (for garnish and extras)

Instructions 

  • Marinate the chicken: Mix olive oil, garlic, herbs, lemon zest and juice, salt, and pepper. Coat chicken and marinate for 10 minutes.
  • Cook the couscous: Boil water, add couscous, cover, and steam for 5 minutes. Fluff and stir in olive oil and herbs.
  • Cook the chicken: Sear in a skillet about 4-5 minutes per side until golden and cooked through. Rest and slice thinly.
  • Prepare tzatziki: Grate cucumber, squeeze out water, and mix with yogurt, garlic, lemon juice, dill, mint, salt, and pepper. Chill until serving.
  • Assemble bowls: Layer couscous, sliced chicken, diced cucumber, red onion, and optional extras. Drizzle with tzatziki and olive oil. Garnish with herbs.

Notes

Use fresh herbs for the best flavor and adjust seasonings to taste.
