Instructions
Marinate the chicken: Mix olive oil, garlic, herbs, lemon zest and juice, salt, and pepper. Coat chicken and marinate for 10 minutes.
Cook the couscous: Boil water, add couscous, cover, and steam for 5 minutes. Fluff and stir in olive oil and herbs.
Cook the chicken: Sear in a skillet about 4-5 minutes per side until golden and cooked through. Rest and slice thinly.
Prepare tzatziki: Grate cucumber, squeeze out water, and mix with yogurt, garlic, lemon juice, dill, mint, salt, and pepper. Chill until serving.
Assemble bowls: Layer couscous, sliced chicken, diced cucumber, red onion, and optional extras. Drizzle with tzatziki and olive oil. Garnish with herbs.
