Protein

  • 4 pieces boneless, skinless chicken breasts (about 6 ounces/170 grams each)
  • 0.25 cup lemon juice (juice of 2 fresh lemons)
  • 1 piece lemon zest (from 1 lemon)
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper (freshly cracked)
  • 0.5 teaspoon smoked paprika (optional)

Instructions 

  • Whisk lemon juice, lemon zest, olive oil, garlic, herbs, salt, pepper, and paprika in a bowl to make marinade.
  • Marinate chicken in mixture for 20-30 minutes in the refrigerator.
  • Preheat grill to medium-high (375°F/190°C). Oil grates lightly.
  • Remove chicken from marinade, shake off excess, and grill 6-7 minutes per side until cooked through.
  • Rest chicken for 5 minutes, then slice and serve.
