A quick and nutritious breakfast or lunch option featuring creamy avocado, fluffy scrambled eggs, and melted cheese wrapped in a whole-wheat tortilla.

Ingredients

  • 2 large eggs (or 3 egg whites + 1 whole egg for leaner option)
  • 1 small ripe avocado
  • 1 large tortilla (whole-wheat or high-protein preferred)
  • 1/4 cup shredded cheese (cheddar, Monterey Jack, or mozzarella)
  • 1/4 cup baby spinach or arugula
  • 1 tablespoon Greek yogurt or light mayo (optional for creaminess)
  • 1 teaspoon olive oil or butter (for cooking)
  • to taste Salt and black pepper
  • to taste Red pepper flakes or hot sauce
  • 1–2 tablespoons salsa or pico de gallo (optional but excellent)
  • optional Fresh herbs like chives or cilantro
  • optional Lime wedge (for brightness)

Instructions 

  • Mash the avocado with salt, pepper, and lime juice if available. Mix in Greek yogurt if using.
  • Whisk eggs with salt and pepper, then scramble in a heated skillet with oil or butter until just set.
  • Warm the tortilla briefly in the pan or microwave.
  • Spread mashed avocado on the tortilla, add scrambled eggs, cheese, spinach, salsa, and herbs. Add hot sauce or red pepper flakes if desired.
  • Fold sides and roll up tightly. For crispy edges, sear seam-side down briefly.
  • Slice in half and serve immediately.

Notes

For a leaner version, use egg whites and reduce cheese.
