Delicious and crispy zucchini fritters that are quick to make and perfect for a snack or side dish.

Ingredients

Zucchini

  • 2 medium zucchini, shredded
  • 2 eggs eggs
  • 0.5 cup all-purpose flour
  • 0.33 cup grated Parmesan cheese
  • 2 green onions green onions, chopped
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • Olive oil for frying Olive oil

Instructions 

  • Grate zucchini and squeeze out excess water.
  • Mix zucchini with eggs, flour, Parmesan, green onions, garlic, salt, and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Scoop batter into the pan and flatten slightly; cook 3-4 minutes per side until golden.
  • Drain on paper towels and serve warm.

Notes

For extra crispiness, add a little more oil while frying.
