Ingredients

Protein

  • 1 lb Lean ground turkey

Grains

  • 1 cup White or brown rice

Vegetables

  • 1 Onion Onion
  • 2 cloves Garlic cloves
  • 1 cup Bell peppers (chopped)

Broth & Cans

  • 1 cup Chicken broth (for added flavor)
  • 1 can Diced tomatoes

Spices & Herbs

  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 0.25 cup Fresh cilantro or parsley (for garnish)

Instructions 

  • Cook the rice according to package instructions and set aside.
  • In a large skillet, sauté chopped onion and garlic until fragrant.
  • Add ground turkey and cook until browned.
  • Stir in bell peppers, diced tomatoes, chicken broth, and spices. Simmer until vegetables are tender and flavors meld.
  • Mix cooked rice into the skillet, garnish with cilantro or parsley, and serve hot.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce before serving.
