1mediumonion, diced
4mediumcarrots, peeled and sliced
3stalkscelery, sliced
4clovesgarlic, minced
2tspitalian herb blend
1tspkosher salt
0.5tspground black pepper
3potatoesyukon gold potatoes, peeled and diced
1.5cupschopped fresh green beans
2cans (14.5 oz each)diced tomatoes
6 to 8cupslow-sodium vegetable broth
1cupfrozen corn kernels
1cupfrozen green peas
2 to 3tbspfreshly squeezed lemon juice
1/4cupfinely chopped fresh parsley
Instructions
Heat olive oil in a large pot over medium heat and sauté diced onion, carrots, celery, and garlic until softened.
Add potatoes, green beans, diced tomatoes, herbs, salt, and pepper. Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 20-25 minutes until vegetables are tender.
Stir in frozen corn, peas, and lemon juice. Cook for an additional 5 minutes.
Remove bay leaves, garnish with parsley, and serve hot.
Notes
For extra flavor, add a splash of balsamic vinegar before serving.
