Ingredients

Meat

  • 1 pound Ground Turkey (choose lean turkey for a healthy base)

Vegetables

  • 1 Onion Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 Bell Pepper Bell Pepper (diced)
  • 1 Carrot Carrot (shredded or diced)
  • 1 Zucchini Zucchini (chopped)

Grains & Broth

  • 1 cup Long-grain White Rice
  • 2 cups Low-sodium Chicken Broth
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black Pepper (to taste)
  • 1/4 cup Fresh Parsley (chopped)
  • 1/4 cup Grated Parmesan Cheese (optional)

Instructions 

  • Cook the ground turkey in a large skillet until browned, then set aside.
  • Sauté chopped onion, garlic, bell pepper, carrot, and zucchini until tender.
  • Add cooked turkey, rice, broth, tomato paste, and seasonings; stir well.
  • Bring to a boil, then reduce heat and simmer until rice is cooked and liquid is absorbed.
  • Garnish with chopped parsley and Parmesan cheese if desired before serving.

Notes

For extra flavor, add a dash of hot sauce or a squeeze of lemon before serving.
